Glowing with Gratitude Granola Recipe
This has been a staple in my diet lately. Rich in omega-3 fatty acids, superfoods, anti-inflammatory ingredients, and warming spices. The digestive spices and easily digestible elements makes this the perfect grounding and nourishing food for winter.
The days here are cold, dark, and wet. Since moving, we have experienced super storms of lightning and snow as well as power outages, wind storms, double rainbows, and endless clouds. It is times like this, any warmth feels so nurturing. This granola and some matcha always soothes the fatigue that comes from being cold for too long whether outside in the forest, working at a COVID19 collection site, or being inside when doors and windows must remain open to prevent accumulation of droplets from the virus.
This is no COVID cure, but to survive this winter, I strongly recommend nourishing yourself and this is the perfect food!
Glowing with Gratitude Granola
*use organic ingredients when possible
*use freshly ground spices for best results
Organic Oats (2 cups)
Coconut oil (1/3 cup)
Cinnamon (2-3 tsp)
Ground flax (2-3 tbsp)
Drizzle maple syrup or your choice of sweetener (avoid heating honey as per Ayurveda)
Turmeric (the more the better)
Cardamom, cloves, ginger (1 tsp)
¼ cups pecans
¼ cups chopped walnuts
¼ cups chopped pumpkin seeds and sunflower seeds
¼ cups chopped hazelnuts
2 tbsp chia seeds
2 tbsp sesame seeds
Massage it all together!
Press flat on large baking tray.
Optional: Infuse it with your love and intention for health.
Bake 40 minutes at 300 degrees or until golden, cool for 25 minutes.
